Healthy version Korokke (Japanese croquette)

Korokke is a popular Japanese deep-fried dish similar to croquettes. It usually consists of mashed potato, cooked minced meat and onion. The mixture is then shaped into patties, covered in breadcrumbs and deep fried.My version of baked korokke is much healthier than the conventional deep-fried korokke. The melted cheese inside the korokke will make this dish especially mouthwatering!

INGREDIENTS (SERVES 2-3):
  1. 100g Minced meat (beef or pork) 
  2. 80g Onions 
  3. 40g Carrots 
  4. 400g (approx.) Potatoes(peeled) 
  5. 1 medium-large egg 
  6. flour, breadcrumbs, cheese, oyster sauce, salt, pepper
INSTRUCTIONS:
  1. Heat about 1/2 tsb oil in a saucepan, add choppped onions and saute
  2. Once onions turn translucent, add chopped carrots
  3. Cook onions and carrots for about another 1-2 mins, add minced meat and saute
  4. When the meat is almost cooked, add about 1tsb of oyster sauce
  5. Mix well and remove from heat when everything is cooked
  6. Mash cooked potatoes, add sauteed meat and vegetables, mix them together
  7. If the mixture turns out very dry, add some milk. But make sure the mixture is not too sticky to shape.
  8. Add salt and pepper to taste (yes it already tastes good at this point)
  9. When the mixture is not too hot to handle, take a proper portion of the mixture, put cubed cheese in the middle
  10. Shape into korokke patties, slightly coat with flour
  11. Then coat with beaten egg
  12. Finally coat the patty with breadcrumbs
  13. Bake at 350℉ for 20-25 mins
  14. You can turn the korokke over half way through, so that both sides are golden and crispy
