Pork cordon bleu actually has nothing to do with Le Cordon Bleu, the famous chain of hospitality and culinary schools worldwide. But at the end of the day, as long as the dish is tasty, the origin really doesn’t matter that much, does it?
Ingredients (serves 2):
- 2 boneless pork chops (about 120g each)
- 2 slices ham
- 2 slices cheese (mozzarella, Swiss cheese, or even processed cheese)
- ~1/2 tsb Dijon mustard
- 1 egg
- Panko bread crumbs, flour
- salt, pepper to taste
Instructions:
1: Cover pork chops with plastic wrap. Pound pork chops with a meat tenderizer or bottom of a pan until thin (less than 0.5 cm). Lightly season with salt and pepper.
2: Spread Dijon mustard over each slice of pork, then place a slice of cheese, followed by a slice of ham.
3: Roll up tightly, make sure cheese and ham are fully wrapped inside, cover with plastic wrap, refrigerate for 30 min.
4: Discard plastic wrap, then coat pork rolls with flour, egg (whisked), and lastly in bread crumbs.
5: Heat oil in a small pan, cook pork cordon bleu over medium heat until golden. Place pork on baking rack, bake at 190 C for 10-15 min or until fully cooked.
